What food will go bad in checked luggage?
I want to take some mayo and salad dressing home in my checked luggage from Florida to Utah.
Will it be terrible when I get home? Excellent or terrible thought?

It depends on how long it goes without being in a refridgerator.. I wouldn’t say it’s a excellent thought.
If these items are shelf-stable (that is, you’ve bought them from a store and they are sold unrefrigerated), then you would not likely have issues with them so long as they have not yet been unopened. (At the point that they have been opened, then refrigeration is necessary.)
If the items require refrigeration for any reason (that is, they’ve either been opened already or they are homemade items), then you are running the risk of contamination by leaving them out of refrigeration, even for the duration of the flight.
As others have said, if they are sold unrefrigerated and have not been opened then the only thing you need to do is wrap in bubblewrap so the bottles do not break. If they have been opened or are sold cold then my suggestion would be to get a couple of gel pacs to freeze and place one on each side of the bottles and wrap the entire unit in bubblewrap. If it were me I would then place that in a plastic box in the suitcase. Ice packs are fine in checked baggage.
That is fine. Just make sure to place it in a plastic bag, just in case it explodes or something. It won’t be a problem.
